Harborview Hospital Receives Farm Fresh Food
Harborview Medical Center (HMC) in Seattle is offering a Farm Fresh Salad Kit to go in their cafeteria. And it has been an instant hit with their customers. The $6.50 bag offers a selection of organic veggies for the person on the go: to take back to their desk, to enjoy in the summer sunshine, or to take home. Harborview provides the courtesy salad dressing.
The idea was the brainchild of Harborview Chefs RJ Owen and Mike Prince, Registered Dietitian Ben Atkinson and Cloud Mountain Farming Center/Puget Sound Food Hub Cooperative member Cheryl Thornton. Looking for more opportunities to expand their local selections in the cafeteria, they came upon this idea. The portability, affordable price and opportunity to eat/snack on organic local produce seemed worth a try. It compliments current HMC selections beyond their locally sourced special of the day and salad bar.
Future offerings may include specialty varieties of Cloud Mountain Farming Center peaches or apples in a Chef’s Fresh Bag.
“Part of the fun is teaching customers about new varieties as well as selections that are grown in Western Washington,” says Cheryl.
Chef Mike Prince embraces the opportunity to provide “local selections that are the best, most fresh for a given week. Foods that are at the peak of season”
